Vegetarian Ragu

Ingredients

  • 250 g cooked white beans
  • 100 g cherry tomatoes
  • 150 g sweet corn
  • 1 onion
  • 1 clove of garlic
  • 100 ml tomato pulp
  • 25 g coriander
  • 150 g rice
  • Qb of salt
  • Pepper to taste
  • Olive oil qb

Preparation

  • Cook the rice in salted water. Set aside when ready to serve as a side dish.
  • In a separate pan, add olive oil, chopped onion and chopped garlic. Cook for a while.
  • Add the tomato pulp and half of the chopped coriander. Let it cook a little.
  • Add the white beans and sweet corn. Mix and season with salt and pepper. Let it cook a little longer.
  • Wash the cherry tomatoes and add them to the mixture. Mix.
  • Sprinkle with the remaining coriander.
  • Serve.

Tips

  • Add other ingredients that you enjoy. Carrots, mushrooms or zucchini are great options.
  • The amount of beans and sweet corn refers to drained weight.
  • A touch of chili in the ingredients also goes very well.
  • You can replace the coriander with parsley, if you like.
  • In addition to rice, this dish goes very well with any type of pasta.
