Ingredients
- ½ cup softened butter
- ¾ cup sugar
- 1 egg
- Zest of 1 lemon
- 3 tablespoons lemon juice
- 2 cups flour
- 1 teaspoon baking powder
- A pinch of salt
Preparation
- Preheat the oven to 180ºC and line a baking tray with baking paper.
- In a large bowl, beat the butter and sugar until creamy.
- Add the egg and beat well until fully incorporated.
- Add the lemon zest and juice and mix again.
- Sift the flour, baking powder, and salt into a separate bowl. Gradually add this mixture to the lemon mixture, stirring well until you get a soft dough.
- Shape the dough into small balls with your hands and flatten them slightly. Place them on the baking tray, leaving some space between the cookies.
- Bake for 12 to 15 minutes.
- Remove from the oven and let cool before serving.
