Lemon cookies

Lemon cookies are perfect to accompany tea. Learn how to make them with this simple recipe.

Ingredients

  • ½ cup softened butter
  • ¾ cup sugar
  • 1 egg
  • Zest of 1 lemon
  • 3 tablespoons lemon juice
  • 2 cups flour
  • 1 teaspoon baking powder
  • A pinch of salt

Preparation

  • Preheat the oven to 180ºC and line a baking tray with baking paper.
  • In a large bowl, beat the butter and sugar until creamy.
  • Add the egg and beat well until fully incorporated.
  • Add the lemon zest and juice and mix again.
  • Sift the flour, baking powder, and salt into a separate bowl. Gradually add this mixture to the lemon mixture, stirring well until you get a soft dough.
  • Shape the dough into small balls with your hands and flatten them slightly. Place them on the baking tray, leaving some space between the cookies.
  • Bake for 12 to 15 minutes.
  • Remove from the oven and let cool before serving.
