INGREDIENTS
- 1 cup ground almonds
- 1 cup of wheat flour
- ½ cup sugar
- 1 egg
- ½ cup softened butter
- 1 teaspoon baking powder
- 1 teaspoon almond essence optional
- A pinch of salt
- Whole almonds for decoration optional
PREPARATION
- Preheat the oven to 180ºC and line a baking tray with baking paper.
- In a large bowl, beat the butter and sugar until creamy.
- Add the egg and almond essence (if using) and beat until well incorporated.
- In another bowl, sift the flour, baking powder and salt. Add the ground almonds and mix well.
- Add the dry ingredients to the butter and egg mixture, stirring until you obtain a smooth, soft dough.
- Form small balls of dough with your hands and place them on the baking tray, flattening them slightly. If desired, place a whole almond in the center of each cookie for decoration.
- Bake for 12 to 15 minutes.
- Remove from the oven and allow to cool completely before serving.
