Traditional Almond cookies in 5 minutes

INGREDIENTS

  • 1 cup ground almonds
  • 1 cup of wheat flour
  • ½ cup sugar
  • 1 egg
  • ½ cup softened butter
  • 1 teaspoon baking powder
  • 1 teaspoon almond essence optional
  • A pinch of salt
  • Whole almonds for decoration optional

PREPARATION

  • Preheat the oven to 180ºC and line a baking tray with baking paper.
  • In a large bowl, beat the butter and sugar until creamy.
  • Add the egg and almond essence (if using) and beat until well incorporated.
  • In another bowl, sift the flour, baking powder and salt. Add the ground almonds and mix well.
  • Add the dry ingredients to the butter and egg mixture, stirring until you obtain a smooth, soft dough.
  • Form small balls of dough with your hands and place them on the baking tray, flattening them slightly. If desired, place a whole almond in the center of each cookie for decoration.
  • Bake for 12 to 15 minutes.
  • Remove from the oven and allow to cool completely before serving.
