Red cabbage salad

Ingredients

  • 1 small red cabbage
  • 1 green apple
  • 1 large carrot
  • 1 small red onion
  • 50 g raisins
  • 3 tablespoons mayonnaise
  • 2 tablespoons of natural yogurt
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Chopped walnuts optional
  • Lemon juice optional

Preparation

  • Wash all the vegetables well. Cut the red cabbage into thin strips and place it in a large bowl.
  • Peel the apple and cut it into small cubes, adding them to the bowl with the red cabbage.
  • To prevent the apple from oxidizing, sprinkle it with lemon juice.
  • Grate the carrot and chop the red onion into thin half-moons. Add both to the bowl.
  • Add the raisins and mix all the ingredients well.
  • In a separate bowl, prepare the sauce by mixing the mayonnaise, natural yogurt, balsamic vinegar, salt, and pepper. Adjust the seasoning to taste.
  • Add the dressing to the salad and mix well so all the ingredients are well coated.
  • If desired, add chopped nuts at this step.
  • Let the salad rest in the refrigerator for at least 30 minutes before serving, so that the flavors can develop.
